Kitchen Kaleidoscope 2011 "Assistance League"

I had the amazing Pleasure of donating my time to Assistance League of Bend Kitchen Kaleidoscope 2011, on Saturday June 18th. Assistance League is my Favorite Charity and I truly believe in what they do. They help so many children and all the Women who are apart of it are such caring, thoughtful, strong Women. I made over thousand little desserts for people to enjoy and boy did they. I ran out of everything by 2pm. I made:

Espresso My Love, Pistachio Pistachio, Red Velvet Berry Love, and Almond cake with a passion fruit Butter cream. Then I made French Macarons and a lot of Meringue's, Plus I had Caramel Walnut tarts for sale, Creme Brulee Fresh fruit tarts, Champagne Strawberry Macarons and Espresso Cupcakes.

I had so much fun and I meet so many amazing people. I want to thank Connie Dean " President of A.L." Nancy Mishler and Danielle Snow. Also all the other women who volunteered at The Murphy Home. Also Sara Murphy for her incredible home. It was a perfect Fit. Thank you all so much.

15th Semi-Annual Kitchen Kaleidoscope

The Assistance League of Bend presents this annual fund raising event now in its15th year. The gourmet kitchens of seven extraordinary homes in the Northwest Crossing and North Rim neighborhoods are featured. Located in northwest Bend, Northwest Crossing is an award-winning community with a mix of home designs and sizes. North Rim, also in northwest Bend, features luxury homes all designed with consideration to the surrounding native environment.

Each home offered the opportunity to shop for home and garden items available from vendors, artisans and artists. In addition, the tour highlights the fine art, craft and antique collections of the homeowners.

Assistance League of Bend is one of the more than 120 chapters of Assistance League a national nonprofit organization that puts caring and commitment into action. For the fiscal year 2010-2011, there 141 dedicated members volunteered over 13,000 hours and touched the lives of more than 3.077 people in the communities of Bend and La Pine through there philanthropic programs.

Portland Bride and Groom Magazine Photo Shoot!

***I had the incredible pleasure of being asked to be apart of Portland Bride and Groom Magazine at the Portland Bravo Wedding Show February 2011. I met a lot of incredible people there. One such person was Anna Sachse, editor of Portland Bride and Groom Magazine. When Anna asked me if I would be interested in doing a shoot for her Magazine, I enthusiastically said yes. The idea for the cake, which was a Midnight Summer’s Dream and Woodland themed was a collaboration between the two of us. So I made a Rough Iced Hexagon Shaped cake with handmade Marzipan stone fruit. It was supposed to be Ferns and burnt meringue, but I loved this so much better. Showing up in Portland to deliver the cake, to be photographed was incredible. I was so nervous, hoping that I delivered what they wanted. When I got there it was decorated so magically I wanted to stay all day and see what they were going to do but we left and enjoyed Portland for the Day. Which I am so excited to be moving there with my Husband in September. It was quite amazing seeing all the other dessert’s and props there. There are so many amazing and talented people in Portland. I am totally happy with how it all turned out and so grateful for the opportunity. I really love what I do and it is so nice to have people recognize that. Please all go out and Buy the Magazine on the shelves now!!!!

Bravo Central Oregon Wedding Show 2011 In Sunriver Resort!!!

Oh my gosh here I am its 2:30am and I am still up. You would think after night less hours this week preparing for the show and also having a big wedding cake Yesterday, all I would want to do is Crash. Oh no apparently I am still on a high of how much fun I had at the Central Oregon Bravo Wedding Show. It just goes to show you that I don't get out that much. As I was uploading all the photos I took today and am reminded of how much work I actually did. It all seems like such a haze, Not realizing that I may have gone overboard. There were just so many new techniques and textures that I wanted to show all of you. As you may know I have only been doing wedding cakes and Birthday cakes as a career for only 2 1/2 years now. I have always been a pastry chef, I went to school at The Culinary Institute of America in Hyde Park New York. I have traveled and worked in Europe, Seattle, California and New York. Working with many amazing top chefs. Whipping up amazing mini works of art on plates enjoyed by dinners w/ their lovely meal. Changing the menu every season and working in the fast paced environment. I started making cakes cause someone famous who I will not name said I should give it a try, So I stepped away from being a pastry chef and Started my Business. I am really Loving what I do. I have taught myself how to make my own Fondant, Gum Paste Flowers, Building a cake and definitely starting and owning a business. Which is all harder than it looks. So Honing my craft has been a def finite labor of love. I have really developed a passion for what I do and especially meeting and creating that relationship with my brides ( who if I didn't have the awesome brides I would not be in business) It is all worth it when I deliver that cake and I know that it is the cake they wanted and the cake that reflects their style and Personality as a couple and the cake I created for them. Anyways I know I am getting off subject but I love what I do and if I didn't what is the point this is way to much work to hate what you do. So anyways I made so many cakes because I really wanted to push myself and see if I really could blow people away. I think I may have achieved it. I had a very successful day. I wasn't sure at first but when I got home and saw all the emails that I have received I new it was a great show. I was so happy to share this day with amazing vendors as well. Plus she was a blast to work with as she is at weddings. Its funny January we seem to be doing all the weddings together , Well at least three back to back. Also keeping the beats happening is always Courtney from Flip Flop Sounds http://www.flipflopsounds.com/ We have worked together a lot and I love it!!! So do the brides. Also Chloe Restaurant was in our room and so was bed bath and beyond and Seventh mountain resort and AAA Travel. So Much fun I had a great room and Lots of fun. OK well lots of cakes and even a dessert bar which I am doing so many of this upcoming wedding season. So enjoy the photos and it was so great meeting all you lovely brides today. I look forward to working with all the lovely brides and creating works of art. Now I will sleep.

Awbrey Butte Home Wedding of Jennifer and Ian S!!!!

This was such a fun spectacular wedding. I meet Jennifer over e-mail and when we finally meet for a tasting she was so cute and excited. I love meeting with couples who are really ecstatic about their wedding. She loves cupcakes and wanted something special for her wedding. She didn't want a traditional cake cause she wanted her guest to be able to pick up, enjoy and dance. Jennifer let me design all the cupcakes she just wanted them to be fallish to match her colors. Well my favorite leaf is a Japanese Maple leaf and I just had to make them and a couple others. The flavors she picked were Citrus Dream, Red velvet Love and Love Goddess. These are such great flavors for fall. Byron Roe http://www.studio-br.com took all the beautiful photos which this first one with the children I think is such a perfect photo. A Sunday Snowy Winter Wonderland!

WOW!!! I love the winter in Bend especially since it is snowing non stop here. I love the fact that I don't have to work on Sundays now and can just make crafts bake for myself and curl up to some Coco Rosie and Devendra Banhart by a fire. Aw Winter! So I was having such a sweet tooth on Sunday so I decided to make a decadent breakfast. Thank you mother earth for the beautiful weather and giving me a day to just knit and enjoy my time with my husband and baby girl Keyki.

Cardamon Chocolat Chaud

w/ Ginger Whip and Pepitas

Serves 2:

½ cups whole milk

2 ½ Tbsp. water

2 ½ Tbsp. granulated sugar

3 oz. bittersweet chocolate, finely chopped

1 Tbsp. Cardamom pods crushed

In a medium saucepan, combine the milk, water, and sugar. Place over medium heat and whisk occasionally until the sugar is dissolved. Increase the heat to medium-high and bring the mixture just to a boil. Remove the pan from the heat and whisk in the chocolate. At this point, blend the mixture. If you have an immersion blender, you can do this directly in the saucepan; if not, you’ll need to transfer it to a traditional blender. Either way, blend for 1 minute (on high speed, if using a traditional blender – and take care(!), as hot liquids expand when blended). The finished mixture should be very smooth and frothy.

Serve immediately.

Chestnut Buttermilk Pancakes

w/ Ginger Whip and Real Orange Maple Syrup

For the Sourdough Starter:

1 cup whole milk
1 teaspoon active dry yeast (1/2 packet)
1/2 cup apple cider
3 tablespoons packed light brown sugar
2 tablespoons unsalted butter, melted
1 cup all-purpose flour

For the Pancakes:

1/2 cup all-purpose flour
1 large egg, slightly beaten
1 teaspoon baking soda
5 Tbsp. Chestnut Paste

Directions

Make the sourdough starter: Warm the milk in a small saucepanover low heat to about 110 degrees F. Transfer to a medium bowl, sprinkle with the yeast and let stand until foamy, about 5 minutes. Whisk in the cider, brown sugar, butter and 1 cup flour until smooth. Cover with plastic wrap and let stand at room temperature overnight.

The next morning, make the pancakes: Whisk 1/2 cup flour, the egg, baking soda and chestnut paste into the sourdough starter. Cook!!

Maple Syrup:

2 C Maple Syrup

1 zest of a Orange

Heat add zest and serve.

Ginger whip;

2 C Whipping Cream

10 g Fresh Ginger

Bring Cream to a boil add ginger and seep for 15 min. Put in cooler and let chill, Strain, whip and serve

ENJOY!!!!!

A SWEET 16 HARRY POTTER Cake!!!

I was so excited when I got this order, I love doing sweet 16 cakes and not traditional ones at that. I am a big fan of Harry Potter and I have read all the books. When I asked the mother what her daughter was into, first thing that came to her was Harry Potter. Since the Movie is just coming out I thought that would be such a great cake to make. So I did a 2 tiered book cake with Harry's famous scarf and wand and then I added the Necklace from the cover of the Last book. The cake was all Rich chocolaty Love Goddess. I also used Modeling Chocolate for everything, which taste better. By The way the best movie in the serious, I loved it.

A Thanksgiving Feast!

So wow what can I say. This has been such a wonderful year and I was so excited to actually not be working the day of Thanksgiving. I had a ton of orders but nothing I couldn't handle unlike last year. I was able to have a nice quiet Thanksgiving dinner with my parents and my amazing husband and Dog Keykers. I decided this year we should do more plated items instead of having tons of leftovers which we don't finish. It was so good and I think we may continue to do that. We just relaxed, made food and saw a movie. What a perfect Day!

This is one of the 3 desserts I made which is a Jack Daniels Frangipane Pecan Pie with Ginger whip and Jack Daniels Caramel!

I rarely do this cause I will admit I am a recipe hoarder, when I create a good one I just want it for me.

But I will release this wonderful one to you all.

Frangipane:

1 cup whole blanched almonds -- toasted and cooled

1/2 cup sugar
3 tablespoons sugar
8 tablespoons unsalted butter -- softened
1 large egg -- room temperature
1 large egg yolk -- room temperature
2 teaspoons all-purpose flour
1/2 vanilla bean -- halved lengthwise and seeds scraped to loosen
1/4 teaspoon salt

Directions:

Preheat oven to 375F. Process nuts with 3 tablespoons sugar in a food processor until finely ground.

Put butter and remaining sugar in a bowl of an electric mixer fitted with a paddle attachment; cream on medium speed until pale and fluffy, about 2 minutes. Add egg and yolk; mix 2 minutes. Add nut mixture, flour, vanilla seeds, and salt; mix on medium-high until pale and fluffy, about 3 minutes.

Basic Pie dough ( I will not give you this one)

Pecan Pie filling

Jack Daniels Caramel:

1 cup heavy cream
1 3/4 cup sugar
5 Tbsp cold unsalted butter; cut into bits
1 tsp vanilla bean
1/8 tsp salt
2 tb Jack Daniel’s

Scald cream in a small sauce pan and keep warm.

Combine the sugar with 3/4 cup water. Cover and bring to a simmer. Uncover and increase heat to maintain simmer. Do not stir but wash down any sugar crystals clinging to side of pan with a pastry brush dipped in water. Watch pan carefully, swirling it from time to time until syrup turns a golden brown.

Remove from heat and whisk in cream in a steady stream. Caramel and cream will bubble dramatically so stir carefully. Stir in butter by bits until completely combined. Stir in vanilla, salt and whiskey.

Roll out pie dough and shape into pans. Fill with cooled Frangipane 1/3 way, Add toasted pecans and fill with pecan pie sauce. Bake at 350 F for 15-20mins. Let cool and remove, add sauce to plate and Ginger whip on top. Enjoy!

A Magical Tetherow Wedding!!!

This wedding of Wendy Weintrob and David Hall was such a pleasure to work with. So Wendy is my Doctor and she owns GLOW Acupuncture, http://www.glowmedicine.com/ She is such a remarkable Doctor and has helped me so much. When she called me asking for vendors who I would recommend i was so excited That she was getting married and of course she was going to have me make the Sweets! So she didn't want anything traditional, so I suggested tarts and cupcakes. She was so excited. I made an assortment of red Velvet Love, Yoga Bunny, Devils Food with Brown Sugar Butter Cream and Almond cake w/ Love goddess frosting. For the tartletts I made Walnut Carmel, Lemon Curd, apple pies and Blackberry Frangipane. I was told they were a hits and she absolutely loved them. California Adventures and Back To Blogging!!!

Hello Everyone! I hope you are having a wonderful Holiday season, I know I haven't been blogging and many of you have e-mailed me asking why. Well I have just been busy and I loved my last post I didn't want to put anything above it. I had so much fun working with Benjamin Edwards and Annie Pacman I hated that it was over. But here I am blogging again. It is great cause I have decided to take on less orders for this season and it has been such a breath of fresh air. I have finally organized my house and started knitting and sewing again and even making a quilt and Christmas gifts this season. I am super excited for things that are coming up . Here are some photos of our California trip for a Wedding and the I.C.E.S Convention!!! I am a member of ICES and it was such a pleasure to be apart of such an amazing community of Cake decorators and artist. I spent so much money a took some fun classes, here our some pictures of the convention and a couple more from our trip. Enjoy and it is good to be back.

So We were able to enjoy ourselves on our wonderful trip. We Surprised my cousins at there surf shop in Lajolla, Ca. Which is called "Bird Rock Surf Shop" They even made a board for my hubby on our wedding day. I used to surf a lot but since being in Central Oregon I rarely get to get out, But I was determined to surf on this trip. My cousins built this surf shop form the ground up( well nit the building cause that is an old bank, which is s cool) But the business. I remember when they had a wear house that they made their surf boards and screen printed shirts out of . Then they opened a little shop down the street which did so well and they has to expand which is now there killer shop. I am so proud of them and I know they will continue to be awesome. Good luck Boys! I am so thankful for your rock'n talents.

So it has finally posted I am super excited!!! I was asked by my friend Annie Pacman from "Marry You Me" to help her out with a photo shoot for her guest blog post. She was asked by " The Sweetest Occasion" to do a inspiration guest photo shoot. I was trilled to be asked and we got started right away with ideas. I was super excited to make something other than cake for a wedding and got to have some yummy seasonal desserts as well. I made a small carrot cake with a toasted meringue and different size tiers. I made french macaroons and tartletts MY FAVORITE!!! We were so lucky as well to have Benjamin Edwards take all of the wonderful photo's . He did such an amazing job and it was such a pleasure to work with him.. It was my first time working with him but for sure a great experience. He was so nice and professional and I can't to work with him in the future. Thank you so much again Benjamin for capturing the true beauty of my desserts! Gilson Wedding!!! McMennimens Bend Oregon

Jamie Asson is the beautiful and fun bride of this lovely wedding. I meet Jamie last year when we rented a house from her property mangaemnt company she works for and while talking to her then I was doing her one of her friends wedding cake in a couple of weeks. Which is so crazy sometimes how small Bend really is. She told me at that time that she was getting married and she would have to see how her friend Cara's cake went and then she would give me a call. Well she loved Cara's cake and I always new she would call me. Well she finally did a little last minute but I luckily was able to fit her in. I was so excited when I found out that her colors were a clover green and a coral color. So I though it would be cute to do a cake with four leaf clovers. I originally was going to do them cascading down all around the cake and while I was making it I realized it looked to Saint Patties Dayish. So I decided on the side cascade with a couple big ones clustered in the middle. I really love how this cake turned out. I added a touch of coral color in the hear in the middle of the cake and then went a head an covered the board in a Coral fondant color which I feel tide in the whole cake. Jamie gave me full creativity license which is always my favorite clients to work with. The cake flavors where for sure my favorite. They had the love goddess cake with a white chocolate butter cream, then my Zest of Orange cake which is a orange zest cake with a grand Mainer ganach, with white chocolate butter cream, and finally a lemon poppy seed cake with fresh tart Lemon curd and frosted with white chocolate butter cream. The wedding was a McMenimens outside by the Whisky Bar. Absolutely beautiful. She decorated it so whimsical and summery. Just like her she is so cute a quirky and a blast to work with. Thank you so much Jamie and Eric I wish you to a fun and exciting life. Congrats!!!!

This wedding was so fun. They got married at there gorgeous home, it had such an amazing view for the fourth of July. The wedding had fireworks and lots of yummy food that was catered by the bride, cause she used to be a caterer in Seattle WA. She ordered a small square cake with a bunch of Goddess cupcakes. There colors were black, red and white as you can see and the flavors they got where vanilla bean cake with vanilla bean butter cream and love goddess cake with vanilla bean butter cream. The cake was a German chocolate cake with white chocolate butter cream. I love making my German chocolate cake cause I make it with the love goddess cake and fill it with homemade filling ( NOT FROM A CAN!!!) I toast and candy the pecans and toast the coconut and put it all in there with a hint of coconut milk. Its so yummy. they had a Peppy lei Pei theme so that was there topper. So much fun and a great couple. I wish you two the best of luck in years to come.

Pickerd Wedding Cupcakes at the Buffalo Ranch in Bend, OR

Aw The cupcakes! They are so much fun I wish I got more orders for them for weddings. I mean I do a lot about 10-15 weddings per year with cupcakes but its always fun to do more. They are just so cute and way fun. This couple was so cute. They were married out in there family farm at the Buffalo Ranch. It was breathtaking and everyone was so sweet and relaxed which is always nice to see. Hailey's colors were a lavender and lime green. So I did a beautiful lavender color flower with a hint green color rose out of gum paste. The flavors they picked were Citrus Dream, Lotus and Southern Fragrance. They are my favorite flavors and I was so happy to make them for such a lovely couple. The Citrus Dream is always a summer time favorite and so refreshing in this Central Oregon hot weather we are having. Also Tate and Tate catered which is always a yummy treat, I wish I could stay for the wedding sometimes. Thank you so much you too and it was such a pleasure to be apart of your special day.

Wow! This cake was so precious. This couple came in around March and wanted a cute cake for their wedding and when Ana sat down she saw my Purple broach wedding cake display that I have in my office and said I want that! I was excited cause I designed it for a bride just like her. Her colors were toup and ivory. So I did an Ivory butter cream with pearl dragees around the cake and pink toup broaches both with cascading small blossom flowers. They were married at Suttle lake out on the water and had the reception in the cute restaurant there. When I arrived I had to drop off her bouquet from Singing Sparrow flower shop http://www.sparrowflowers.com/, which by the way was so beautiful as always. Anyways I got to see where they were staying. They rented one of the cabins there the coolest one and she was so happy to give me a tour. I love Suttle lake wedding cause they are out in nature and just breathtaking. The cake was a 3 tiered Vanilla bean butter cream cake with 2 layer of Love Goddess cake and the bottom layer was the Lotus. Yummy! They rented my bird branch stand which I think made the cake. Kimberly from kkayphoto.com was the Photographer and she did such an amazing job as always. I don't have the photos yet but when I get them I will add them to these. I wish these two the best of luck i know they had some challenges before there wedding date but they made one and did it. Thanks you too for letting me be creative an loving it.

I love this cake!! It was so much fun to make these feathers. I have been wanting to make a cake with feathers for the longest time, and I finally got too! Which know I am hooked and have to design more cakes with feathers. The Bride wanted a peacock feather cake. She was just going to use real peacock feathers but I convinced her that if she would let me I could do a really unique modern style peacock feather. So she was excited and that is what I came up with. I just wanted it to look clean and wedding like not so dark and over done like most peacock feather stuff. The wedding was at Aspen Hall in Bend Oregon and it was decorated so nicely. Their colors were navy blue with gold and ivory accents. I did a small cake with the top tier being the "Lotus" cake and the bottom tier being the "Oregon Love". They also had a bunch of goddess style cupcakes with those flavors. I decorated each cupcake with a blue bow with gold accents and others with an ivory feather. Such a fun cake I hope to get more like this. FOREST WEDDING AT SUTTLE LAKE!

This wedding was so much fun! I have been wanting to do a forest wedding for so long. It was so much fun. The wedding was beautiful with tents outside over looking Suttle Lake. The Bride a Groom are from Corvallis. They found me on the Internet which most out of the area brides do and wanted to book me right away. I was so stoked when she said she was doing a forest theme for summer. The weather the past couple of weeks has not been the best but on June 5th they couldn't asked for a better day out in Suttle Lake. The tables had cute little glasses with votive's and ferns. They wanted a small cake on my bird branch cake stand with a bunch of Goddess size cupcakes with acorns, mushrooms, ferns and flowers. So I did the top tier cake a rich devils food cake with apricot jam and brown sugar butter cream and the bottom tier was a moist carrot cake with apricot jam and brown sugar butter cream. The cupcakes where devils food with brown sugar butter cream w/ acorns and a maple leaf on top and a carrot cake with brown sugar butter cream with a chartreuse flower on top. So much Fun!! So when I delivered the cake to Suttle lake of course everything was set up for me and the bride had these awesome cut logs for me to display the cupcakes on and the cake table was in the perfect spot cause Suttle lake and the trees were in the background. So Carolyn and Tom where just walking around just talking a looking at things and weren't even dressed. My first wedding that I didn't see the bride in her dress. I loved it, it was such a casual wedding and was very refreshing to just talk to the bride and groom and share in their special day. I wish these two the best of luck and a very happy successful marriage and life together. Thanks you Too!!!!!

Maxine 3D Cake for a mothers 75TH Birthday at Mccraths!

So I got a call about 3 months ago, a daughter wanted to know if she could order a cake for her mothers 75th birthday. She wanted to do a cake with Maxine on it form the famous greeting cards. I was super excited and jumped at the opportunity. She wanted Maxine in a cheerleader outfit with a 75 on the sweater. That is all she tole me and everything else I had to figure out. This was the first standing cake I have ever done and boy was it more of a challenge than I even fathomed. The structure I figured out pretty easily but what I didn't think of was the drive to the restaurant. That's where gravity played a huge part in the craziness of the cake. When I went to deli ever to Mccraths restaurant they had never seen anything like it. The daughter who ordered the cake was shocked that it was a 3D cake she was expecting a sheet cake with a Maxine drawing on it but apparently I did way more than I had too! Which I always do and in this case am glad I did. So assembling the head and the arms I just at that moment realized that I built the arms to heavy and they came down but The birthday girl couldn't believe it she was so happy a blushing and looked like a little Maxine. They ordered the Marrionberry Me cake as well which is nice to see that, that cake is quickly becoming a favorite. So here it is start to finish this cake was so much fun and I hope to get many more like this.

Chelsey and Tim S. Wedding!!!

Wow what can I say about these two. Such a fun and awesome couple to work with. So I meet Chelsey at the Bravo Sun river Wedding Expo and she was so excited to meet me. It made me feel like a celebrity. We talked a little and as soon as I got home that evening I had an e-mail from her making sure I wasn't booked for her date and she wants to set up a consultation as soon as possible. We had a tasting and consultation and their after and right their they booked me as soon as they took that first bite. I was so excited cause I have never had a bride so stoked about her cake. Well all of my Brides are excited but Chelsey was thrilled beyond belief, She watches all the cake shows and new so much about cake which made my job easy. Her and Tim her fiance gave me full creative license and if you have meet me that is truly my perfect bride. So I took her colors into consideration and she had mentioned she loved my branch work. So with her colors which were plum and pale buttercup yellow I made small blossom gum paste flowers with hints of plum in the middle with petal dust and then shimmered then up with super pearl dust. For the Yellow I made fondant pearls in a pale yellow and then shimmered those up with a mixer of super pearl and buttercup yellow petal dust. I made the tree branch very thin and life like I usually do thicker funkier branch's but meeting them both I new their wedding at New Hope Church would be very sweet and unique, and it was. I had the pleasure of attending their wedding, which I get invited a lot to my clients weddings but I can't always attend but since this was a Friday night in April I had to go. Anyways the wedding was so special and intimate, it was such a perfect wedding to show and embrace their love for one another. The three tiers they had for their cake was , Joshua Tree, Almond Cake with Lavender Cream Brulee, and Lemon Poppy with Lemon curd. Yummy!!!! They were all a hit, I was so proud of my work I think the cake came put perfectly and exactly how I imagined it. Chelsey was so excited she even e-mailed me the night of her wedding thanking me. Thanks you too!!! I had such a blast and it was so nice to get to know you too and the love you have for one another.

Spring Is In The Air!!

SPRING YUMMIES!!

So Yes as you can see from outside, Spring is here. Bend is so beautiful this time of year. This is why I love living here. I was so excited to be making yummy new treats for this week. This lovely cake is for a baby shower. It was my first time making lady bugs but I think I did pretty well. This was vanilla bean frosting colored a darker mint green. I usually don't color my frosting cause I hate when you are eating a cake and your mouth turns the color the cake is. Not appetizing but I was happy to do it for this client and I heated the color so it should not stain the mouth. This is also a nice change from my pregnant belly cakes. I made about 25 last year and I think I need to come up with a new design, maybe

a pea pod flower theme. who know but I am definitely working on it! Congratulations and I hope you have a great birth!!!

Butterfly Cupcakes are such a cute touch to a spring party! So also I started packaging my pixie cupcakes in egg carton. Cause I am finding out in this little town that people like to copy others ideas. So I feel the need to state when I come up with something new for Bend. People keep telling me that copying in the best way to know that you are on top but it is getting ridiculous. what can you do . I will just have to be ten steps ahead of everyone. Sorry to vent !

Lindsay and Travis Carlton Wedding:

This was such an exciting wedding for me. I had to design everything all on the phone with the bride. She lives in California which I love cause 30% of my brides are from the Bay area. Lindsay was such a perfect client for me she gave me a direction in style she wanted to go and I was able to design the rest. It was a winter wedding so I added touches of ivory snow flakes along side the beautiful plum broach. I swear this broach is so popular this season I have 5 brides who want it but of course all a little different to make their wedding cakes their own. I am a firm believer of not copying another cake designers cake!

Anyways the wedding was so beautiful it was at Sunriver in the Great Hall. Always a pleasure doing weddings their. The photographer was Philip wise and I can't wait to see how his cake pictures turned out. The bride also wanted an assortment of cupcakes to go with the little adorned cake. I also adorned these with ivory and plum snow flakes. It was such a blast and I wish you too the best of luck. You make such a great couple! Gregg and Adele Wedding:

This wedding was so cute! It was at Sun River Resort in the Fireside room. It was a wedding for 8 people. The smallest wedding I have ever done, but a lot of fun. The flowers were done by Singing Sparrow flower shop and they were breath taking. Nicole really did a fabulous job and of course I always love working with her. Their was no photographer or DJ. It was a small classy wedding. Adele was such a pleasure to work with and she let me design a cake just for her. Which as you know are my favorite clients to work with. But I took her Broach on her dress and made it edible with some Dragees and edible silver leaf and since Nicole form Signing Sparrow did a lot of sweet peas I made those out of Gum paste. ( which was my first time) The cake was displayed in the corner of the room with a beautiful arrangement of flowers and candles. thanks again you too I had a blast. Oh by the way Greg the husband was such a big part of the process which I love to see the groom participating.

TOUR DU CHOCOLATE CREATION!!!

Tour Du Chocolat was a hit this year with about 900 people. I had a great time making this chocolate creation this year, I made a CHOCOLATE CLOUD: " Decadent Devils Food Cake with alternating layers of soft Peruvian Caramel and Valhrona Lavender Ganache, frosted with Brown Sugar Butter Cream and finished with homemade Chocolate and White Chocolate fondant." I know its a mouthful but I was very proud of what I accomplished and I am glad I took a risk even though I didn't win this year but I finally got my award from last year winning "Best on Tour" 2009. I made my cake stand as well with chocolate fondant and I did a Turquoise royal icing stencil on top then had a truffle ball and on top of that I displayed the cake. This was a mini challenge for me cause I am practicing for the east coast cake competition in fall 2010. I hope I win that one.

I also just want to say that I am so stoked on the new shop at the old mill called "Serendipity" Cards * Paper * Treasures. I am excited cause I always went to Portland to get that amazing handmade paper and ribbon but now I don't have to, they are all I need to make my cakes stand out. I used their turquoise ribbon to line my cake boards it was so cute and made my cake so awesome. So go check them out: 450 SW Powerhouse Drive, Suite 402. Thanks so much Jessica and Megan! GRAND OPENING!!!!

Please come and check out our new space!! Right downtown 206 Oregon Ave. underneath Silver ado. Jessica and Jim's New Years Weekend Wedding:

This cake was a serious challenge for me. Jessica was such an amazing bride threw all of my traveling. I was in France a month before her wedding. With all that happened in Amsterdam over the Holidays, my plane was delayed and I literally flew in 14 hours before her wedding. I was able to bake and make the wedding cake in only 6 hours. A record for me. The cake turned out beautiful I was really happy with the outcome and given that I was cooking for a month not baking I came back ready to go. Thank you Jessica and Jim you were such a fun couple and I love hat Jim whore his Hawaiian shirt. It was also my first wedding at Deschutes Brewery , Mountain room. I wish you a happy Life together.

Art Walk at Singing Sparrow:

Nicole from Singing Sparrow Flower shop was so kind to invite me to be her featured artist for February Art Walk . I had so much fun, I made 230 assorted pixie cupcakes and literally by 7:25 they were all gone. I also made Nicole a little display cake for her to display in her amazing wonderful shop. Every time I get some extra cash I have to by a cake stand or card or nic nac. I just love it, its so magical. Please go in their an support her talent. I am so happy to be working with her this wedding season. It was also great to meet such great people.

Bravo Central Oregon Wedding Show!!

The January 9th 2010 Bravo wedding show was so much fun. I had such a great time and was able to meet some amazing brides and grooms. I also had the pleasure of sharing a room with High Dessert Museum, Thyphoon and Barking Squirrel ( both provided us with some yummy food, that I couldn't stop eating) Lights in the attic , videoography(litacreative.com) ( who rocked and was so nice.) Dave Clemens, DJ (daveclemens.com) (He keeped us grooving). Langa Photography, ( Langaphotography.com). Rev Sana, Officiant (revsana.com) She was such a sweet heart. We all had so much fun and I felt we had an amazing room full of talented, creative and just nice people. It was also amazing to meet all of the brides and grooms and to talk to them on a personal level. It was my first wedding show ever and I felt it went very well. Bravo did an amazing job and by what my brides are saying it was the best show they have been to. It was such a successful show and I can't wait to make all of the unique wedding cakes this summer from my amazing creative Brides and Grooms. I look forward to working with with them. I am very fortunate and have been very lucky to get such trusting couples. Good luck to everyone this wedding season. I will see you all next year. Thanks Bravo!!!

FRANCE JE T'AIME

WOW!!!! France was such an amazing once in a lifetime experience and one that I will never ever forget. I was very fortunate to be asked to be a personal chef in France for 2 amazing Families. During my month stay their I prepared many delicious meals such as Isralie couscous with a swiss cheese bechamel, garlic sage shrimp and a small spinach and herb salad. Also My favorite for Christams Dinner I made a Herbed roasted chicken with sage herbed gravy, Garlic mashed potato's sitting ontop of a savory herbed pain pardu, with roasted green beans. I made french toast almost everyday and Swiss Fondue twice which I have to say was the best Fondue I have ever had. Thanks Mike for the amazing recipe. The Lovely house that I stayed in was in Evian Les Bain on the border of France and Switzerland in this little fisherman town. Mike and Kristen who invited me to be their personal chef have a beautiful home right on Lake Geneva and were so gracious to give me my own room and give me Culinary Freedom when it came to what I would make. Except: No onions or Cilantro. Which I found a way around those ingredients. I spent most of my time in Evian but was able to get around to Geneva, Malorie, Lyon, nad of course Paris. I ate all the pastries my heart disired and had a baguette a day with cheese and lovely wine. I was so ecstatic to learn that the French use all real butter and are Localist. Going to the Markets daily and getting fresh produce, Poultry, Meat , Fish, and Cheese was something I had always dreamed of. EVERYTHING IS BETTER IN FRANCE!!! The French were such nice people, the air is cleaner and the water is so refreashing. I wish I could pick up and move their but I love Bend to much. I made some of the best meals that I have ever made and my desserts were so delectable, not as good as the Patisserie's but close. In Paris My dream has always been to eat Patsries at Pierre Herme, Laudree, Fauchon and Pain Sucree. I finally got the opportunity and boy did I indulge I spent $100 Euros on pastries. I ate them all, they were so good I am still dreaming about them. I also visited most of the Landmarks Paris has to offer and even went and bought tools at the most amazing Culinary stores. All in all I spent way to much money in Paris but is was all worth it. Thank you so much MIKE and KRISTEN and the other family who I won't name ( cause they asked me not too) But I love you all. You Rock for giving me this opprotunity!!

***I AM VERY VERY FORTUNATE TO BE ON MY WAY TO FRANCE TODAY AS A PERSONAL CHEF FOR A KICK ASS FAMILY. THE OPPORTUNITY PRESENTED ITSELF TO ME LAST MONTH AND WITH OUT EVEN THINKING ABOUT IT I SHOUTED OUT "HELL YES'. I HAVE BEEN PLANNING A TRIP TO PARIS FOR QUITE SOMETIME AS WELL AS A TRIP TO THAILAND, ECUADOR, JAPAN AND AFRICA. APPARENTLY WORK ALWAYS GETS IN THE WAY. THIS TIME IT IS FOR WORK AND AND AMAZING OPPORTUNITY I COULD NEVER PASS UP. I AM FLYING INTO GENEVA SWITZERLAND AND SPENDING A DAY THEIR AND THEN WE WILL BE STAYING IN AN AMAZING HOME IN EVIAN LES BAINS ON LAKE GENEVA. I WILL ALSO BE SKIING IN THE ALPS AND FOR NEW YEARS WE WILL BE IN PARIS. I AM NOT ONLY EXCITED TO JUST BE IN FRANCE BUT TO BE ABLE TO GO TO THE SMALL TOWNS NOT JUST PARIS. THIS IS A LIFETIME TRIP FOR ME. I AM A COMPLETE FOODIE AND I WANT TO TASTE FOOD IN PARIS AND FOOD IN A RUNDOWN CHATEAU IN EVIAN. I CAN'T WAIT TO WRITE ABOUT MY ADVENTURES AND I AM HOPING TO BRING BACK SOME AMAZING RECIPES FROM THE LOCAL PATISSERIE'S THEIR, WHERE I WILL BE STAGING . I WANT TO BRING BACK THE MOST TRADITIONAL PASTRIES FOR BEND TO TASTE A ENJOY! SO STAY TUNED FOR MY BLOGS.

I loved this couple. I had so much fun making their wedding cake and lindsay the bride was so laid back and let me have little bit of creativity even though she gave me a picture of what she wanted, it was great. Cara and Eric Mullis Wedding:

Also I would just like to say, I am very sorry for, but I made a wedding cake for Cara Whitson and it was suppose to be a kick ass cake with black piping , purple butterflies and 2 goth fairies on the topper. Unfortunately it did not come out the way I wanted because of that stupid freak snow storm. I was transferring the cakes to the car and I slipped on snow and I only had 20min to fix the cake. So the piping didn't have time to dry and it didn't look good I am so sad to not give the bride the very best cake she deserved. I will make it up to you Cara. ( I am writing this because it is the first time I have ever dropped anything and I feel bad, also I don't have any pictures of the cake)

I finally got pictures and am happy to share them. I love this couple they are the Best!!!

******This month was so much fun I was a little worried that I would be slowing down but this week I am booked with Halloween parties and so thankful for that. I also am going to be in the winter issue of "GUSTO" magazine, they are writing an article about Enlightened Patisserie. I am so excited last Sunday I had a photo shoot with Aaron Olson and that was a blast. I think the stuff from my winter menu came out so well, I am really pleased with my work. ***SHAUN AND MEGAN HAFELE WEDDING:

I was so happy to be apart of my good friend Shaun's wedding. I was so honored to be asked to make his wedding cake. Shaun and I met a VOLO when I was the Pastry chef and he was the Sous chef. We connected so well because of food and he is such an awesome chef and so was Victor and Ashley ( Probably the best chefs I know) But VOLO closed and we were left with our friendship and love for food. So when he told me he was going to propose he wanted to make sure he had me booked for the wedding cake. Which is funny cause usually men propose before ordering the cake. Oh course I was going to make it no matter what and my husband Joshua was in the wedding as the best man. It was such a beautiful and intimate wedding. Megan and her amazing family made everything including the wedding dress and brides made dresses. CONGRATULATIONS you too!!! I know you will love Colorado, We will miss you both.

****SYDNEY"S BABY SHOWER CAKE FOR A LITTLE GIRL:

This was so nice to make the girl baby shower cake cause I have only been able to make them for boys. So I posted this special one cause I loved it and I hope to make more girl ones. I was so excited to make the Baby girl cake I even made a peony flower just for fun ( not a normal thing for me to do it for free cause that flower took me 3 hours) But well worth it. Congratulations Sydney on your Birth of your baby girl!!!

**Katie and Mitch Wedding:

I just loved making this cake. It was so chic and elegant. I love the brown sugar butter cream with the white wood grain piping and the touch of succulents ( which are me favorite plant). This couple was so cute and fun t work with. they had the Apple spice cake with white chocolate cream cheese filing with brown sugar butter cream frosting and I received the nicest phone call after the wedding from Katie's mother. I was blown away by what she said This is why I love making dessert, cause they make peoples day. I am so happy to of made Katie and Mitch's day so special. It was such a pleasure working with you too. It is also so nice to see a couple meant for each other. CONGRATULATIONS YOU TOO!!!

****Tiffany and Kevin Erickson wedding:

This couple was such a pleasure to work with. They live in Portland and we e-mailed like crazy. But originally they wanted a small painted wood grain cake with little details. But at the last minute Tiffany asked for some fall leaves as decoration so I sent her some ideas and she loved the tree branch cascading up the cake with all kinds of fall leaves. This is what I came up with. I love it I had to paint the wood grain a little bigger than I wanted because when I put on the tree branch, all of the wood grain details got lost to I took a chance and repainted it with bigger strokes of wood grain. I loved it though it looked so beautiful in the room. I also have to add the lace were they got married ( East lake resort) Gorgeous!!! They had that place decked out like crazy. It was a beautiful wedding and they were such a cool couple to work with. Congrats you Both!!!

This cake was also for the Rehearsal dinner for Tiffany Jones and Kevin Erickson. This cake cost a lot more than I expected Those chocolate cigar cookies are way too expensive. Oh well it was fun to make and I like how it looks like a modern classic tree stump. Well that is what I was going for.

Wow this summer has been crazy yet successful and I am finding out when a door close another one opens. I just left Cross Water in Sun river as their Pastry Chef and even though it was a fun challenging summer job I am just too busy to devote anymore of my time their. But I met a great couple of friends. I am so excited to be looking for a potential frontal shop area for Enlightened Patisserie so keep your ears open we might have a shop by next summer. I am excited for Fall I just booked some great halloween parties and people are already ordering Holiday Pies. So order yours today!! August was a great month and with the summer ending I am ready for a little creativity time and with winter approaching( hopefully not fast) I am looking forward to creating new recipes and menu items. ***GHOST TREE INVITATIONAL AUGUST 29TH!!!

WOW! I had so much fun being apart of the Ghost Tree Invitational Dinner on The Range. I was joined by so many amazingly talented chefs and luckily I was able to sample some goodies. I was joined by my beautiful Mother and Grandmother who thankfully helped me serve cause for the first hour I had to deliver a wedding cake. But it all went so well and I sold out of 1,200 desserts, which was way more than they asked me to make. I was so happy to see people come back for thirds and fourth and one women I swear took 8 of the panna cottas. I am so thankful that I was invited and I hope to be there next year with some more yummy pastries. I made and assortment of the Pixie cupcakes ( Joshua Tree, Yoga Bunny, Southern Fragrance, Love Goddess, Citrus Dream and Monkey Live) Then I made French macaroons which went in the first 30 minutes. I didn't even get a picture. So for the biggest hit which people were sucking down and licking the cups was the Maple Pana Cotta with a passion Fruit Gelee and an Oregon grown Blackberry. Delicious!!!! I was so happy with the outcome and the greatest part of all we donated a $200 gift certificate to Assistance League! which I am a big supporter and I hope to work with this charity in the future cause they have such amazingly strong women working for these children to cloth them. Awesome, keep doing all the hard work ladies!! Thank you so much For letting me be apart of the 2009 Ghost Tree. It was great having my own buisness their cause I was part of it last year with VOLO but this year it was all me. THANKS!!!

I had so much fun making there wedding cake, I loved making the Bow which I really haven't gotten to do all summer so I was happy. There original plan was to have these darling little birds made out of felt for the cake topper but the women who makes them was booked. I think this turned out great though. It was my first time delivering to Sun river and it went great Kelly the event coordinator is so professional and knew what had to be done and where everything went and it was also great working with their wedding coordinator Jamie Crosier. I was so happy to make this simple chic wedding cake. Amy's mom called me cause unfortunately Hurricanes closed and they ordered there cake from them so since they closed they were out of a wedding cake for their special day. But even though I was so busy I made an exception and added another cake to my already large cake load and I am so glad I did. the wedding was at West side Church and it looked so beautiful. This wedding cake was so much fun to make, I was asked to make a cake for a friend who was getting married in Sunriver at a gorgeous lake house. Unfortunately Betty could not attend who ordered the cake but if she is ever in town I will have to make her something special. This cake is a Pineapple cake with a coconut mousse and a white chocolate butter cream. YUMMY!!!

So I just have to say I absolutely love making these cupcakes and I can't believe how many I sell a week which is great I want to be known for these delectable treats cause they are great for a Tea Party, Book Club Snack, and like last week and tasty treat after a day of Women's Golf. This cake was last minute but so much fun to make. I am so glad we meet Wendee and Ethan and saw Food Inc. (which you have to see it will blow your mind, and gives me more confidence that what I am baking with, even though local and Organic is more money it is just plain and simply a better choice) Anyways it was great hanging with them and i am glad I was apart of her 40th Birthday at Jackson's Corner!

This so much fun to make yet another wedding cake for dear friends. She wanted a beautiful simple wedding cake and that is what i made for them. ***A Rushed Cake with 12 hours notice turned out pretty well at Cross Water. I was super happy with it.

I have been so lucky to be a busy as I have been. Just a couple of fun things that I have been involved in. Kitchen Kaliedascope Tour of Homes was a hit I had so much fun meeting all of those women and men and making over 1200 mini cupcakes which I am happy to report were a hit and thanks to the many orders I get a week from it I am so thankful to be apart of the Assistance league Tour of Homes at Broken Top I hope to be their next year. I will be attending the Sage Brush classics and I am hoping to be apart of the Ghost Tree invitational for Enlightened Patisserie this year as I was in it last year for VOLO. Also look out for my add in Gusto magazine Fall issue. I finally took a mini 2 day vacation for the fourth of July, much needed I haven't had a day off in 3 months, it was nice to bake again for myself and my Husband. This buiseness is really a beautiful labor of love and I love it. I am developing my new dessert menu for Cross Water Grille. I am really excited about it I hope to have al local ingredients. So it has been a while since I have last blogged but yes Enlightened Patisserie,LLC is the winner of "BEST OF TOUR" for the Tour Du Chocolate. I am so excited. This month has been so much fun and we are excited for next month for the Kitchen Kaleidoscope hosted by Assistance League June 20Th don't miss it. Also I made a cake for "David Abell" who is a personal chef in town so call him he makes amazing healthy food. Well here re our entries from The Tour Du Chocolate and a couple wedding cakes and birthday cakes that we have done. Plus Enlightened Patisserie,LLC just finished up a photo shoot with Simone Paddock from Emerald bay Photography she does amazing food Photos as well as architecture so give her a call to. March 20^th – April 3^rd was so much fun in California. I have to first start out by saying thank you so much to THE GREAT DANE Bakery in Los Alamitos, CA. They were so amazing to work with. Thank you talented Terry Torrealba who taught me so much on new icing techniques and decorating made easy she is so amazing. Also big thank you to Jodi and Keld Pedersen for letting me come and learn all about the wedding cake business they were the biggest help. Jodi thank you for showing me the ropes on how to run a successful cake shop. I had so much fun getting to know you both, your staff and eating your delicious pastries and cakes. Thank you Again I will never forget the gracious opportunity you have given me.

While in California we went on a pastry-eating extravaganza from Orange County to San Francisco. I visited Black Market Bakery in Irvine, 86 Degrees Café, Citizen cakes, Tartan Bakery, Vanilla Bake Shop in LA, Jin Patisserie in LA and a coupe more. Oh man I ate a lot and got some amazing new ideas. It was such an amazing trip, can’t wait for our adventure to New York in Winter 09. We will be visiting Ron Ben Israel, Collette Peters, Chickalicious and so many more pastry and cake shops.

Stay tuned April is going to be so much fun. Enlightened Patisserie is going to be catering the Deschutes Public Library and we have 9 beautiful wedding cakes this month so stay tuned.

March has been so much fun. I don't have all of the pictures yet but I will be adding more this month. Enlightened Patisserie will be on vacation till April 5Th to California and will be visiting a lot of Patisserie's and Bakeries. Also Nickol will be working at the Great Dane Bakery in Los Angeles to learn from Keld Pedersen about the wedding cake business and how we can open up our own shop in Bend. Super stoked about it, can't wait to bring new techniques and ideas to my customers in Bend Oregon. Thank you so much for the awesome support this month I had a lot of fun doing the Craig's Wedding Cake and the Mario Brothers Toadstool and Anniston's Soccer Ball Cake plus a lot others.

February A Month Of Love and Prosperity!

Wow this month had been a whirlwind of fabulous cakes and new adventures. This month Enlightened Patisserie LLC has been blessed with teaming up with TLC Catering, which is a fabulous catering company in Bend, OR ( so if you need some tasty real good food for a party contact them).

Enlightened Patisserie is now the Off- Site Pastry Chef for TLC Catering and Mount Bachelor Village Resort through TLC. This is such an amazing opportunity for us and we are looking forward to having a great relationship with TLC and since we are expanding we can now offer our customers a larger amount of products.

So stay tuned cause we have tones of wedding cakes coming up and some fun desserts.

Also Enlightened Patisserie has our new line of cakes, called signature cakes. YUM!!
